Trahanas is a dish made in Greece since antiquity; it is boiled cracked wheat and soured milk used as the basis for a soup. “Politiko” in Greek refers to products or recipes originating in Constantinopel (Istanbul). That in itself is a guarantee of a special experience for the taste buds, since “Politiko” usually involves a combination of exotic herbs and spices. This is a traditional recipe for trahana soup or frumenty, produced with care by the Martavaltzoglou family in North Greece. It has a spicy, rich taste and enticing reddish colour.
