Agiorgitiko, Cabernet Sauvignon
Separate vinification of each grape variety with a small percentage of cold maceration to obtain desired aromatic intensity. Alcoholic fermentation takes place in stainless steel tanks at ideal temperature (22-27 °C) in order to maintain varietal aromatic character and produce desirable secondary aromas. Malolactic fermentation takes place next to produce softer wines. Blending takes place after the wines have aged a bit to produce a well structured and balanced fresh wine.
