The procedure of making dinkel pasta is long and slow, but it is also a creative feast for a premium quality result. It is fermented without adding salt and it is dried at low temperatures, to maintain the unique flavor of dinkel and all its nutritives.

Details/Description

In Greek mythology spelt (dinkel wheat) was a gift to the Greeks from the goddess Demeter, and was first used by the Greeks. Being a sailing people, the Greeks taught the rest of the world how to use, cultivate and honour spelt.
Kritharaki is widely used in the Mediterranean. In Italy its called orzo or risoni and in Israle Ptitim and is a form of short-cut pasta, shaped like a large grain of rice. Kritharaki can be served alone, as a soup accompaniment, as part of a salad or pilaf or giouvetsi or baked in a casserole.
