Homemade Pasta
(Makarounes)
DIFFICULTY: EASY
PREP TIME: 30 MINUTES

Ingredients:
- 350 g makarounes
These are similar to the Italian
“trofie” and resemble little worms
about 6 cm long. If you can’t find them,
use short-cut macaroni. - salt
- 2 large onions
- 125 ml olive oil
- 110 g butter
- grated myzithra cheese
or Parmesan
Preparation:
• Boil the pasta in plenty of salted water for 12-15
minutes or according to package directions until it’s
cooked the way you like it.
• Peel and finely chop the onions.
• Put the oil and butter in a pan and saute the onions
until nutty brown and caramelized. Set aside.
• Drain the pasta. Place some of it on a serving platter,
sprinkle it with grated cheese, and place another portion
of it on top, sprinkle that layer with grated cheese,
and so forth. Top with the onions and their oil. Serve
immediately.
