Tzatziki sauce with fennel

For 4 people

Prep Time: 15 minutes plus 45 minutes resting time

Ingredients (For Tzatziki sauce)

1) 1 large fennel bulb or 2 small ones
2) salt
3) 250g strained Greek yogurt
4) 1 Tbsp finely chopped fresh mint
5) 1/2 lemon
6) freshly ground black pepper
7) extra-virgin olive oil

Preparation

  • Remove the leafy stalks from the fennel bulb and set
    aside. Cut the fennel in thin slices. Put them in a bowl
    with a little salt. Mix and let stand 10-15 minutes.
  • Spoon the yogurt into a serving bowl. Stir in the mint,
    lemon juice, pepper, and 1 tablespoon of oil.
  • Pat the fennel slices dry with a paper towel and chop
    them coarsely. Add them to the yogurt mixture and
    stir well. Taste for salt and let stand in the refrigerator
    for 30 minutes (longer is fine).
  • Before serving, drizzle with a little more olive oil and
    sprinkle a few finely chopped fennel tips over the surface.
  • Serve with fresh bread and raw vegetables (carrots, radishes, peppers, etc) cut in strips.
