Chicken with Cheese and Basil
For 4 people

INGREDIENTS (FOR 4 People)
1) 4 boneless chicken breasts
2) 100g soft goat or sheep’s cheese
3) a few basil leaves, coarsely chopped
4) salt
5) pepper
6) 50ml olive oil
For the yogurt-basil sauce:
1) 300g strained Greek yogurt
2) grated zest of 2 lemons
3) juice of 1 lemon
4) 1-2 Tbsp white wine vinegar
5) 1 Tbsp chopped garlic
6) 1 tsp freshly ground black pepper
7) 1 tsp salt
8) 1/2 cup coarsely chopped basil

Preparation
1) First make the yogurt-basil sauce. Put all the ingredients in a food processor or mixer and blend until the basil has turned the sauce green. Place in a bowl in the refrigerator until ready to serve.
2) With a sharp knife slit the chicken breasts down the middle and open them up, taking care not to cut them completely.
3) Spread one side of each chicken breast with a little cheese and 2-3 pieces of basil leaf. Sprinkle with salt and pepper.
4) Close up the chicken breasts and secure them with toothpicks so they won’t open while you’re cooking them.
5) Heat a few tablespoons of oil in a large frying pan and brown the chicken breasts gently on both sides over medium heat and until thoroughly cooked.
6) Serve garnished with a basil leaf and with the yogurt-basil sauce in a separate bowl.
